Ingredients

2 whole eggs
1/2 cup egg whites
1/4 cup diced onion
1/4 cup diced bell pepper
1/4 cup diced mushrooms
1 cup spinach, roughly chopped
2 pieces sugar-free turkey bacon, chopped
1/2 cup cottage cheese
2 teaspoons Italian seasoning
1 teaspoon crushed red pepper flakes
1/2 tablespoon cooking oil

Instructions

Dice all vegetables and chop the turkey bacon into bite-sized pieces.
In a bowl, whisk together the eggs, egg whites, Italian seasoning, and red pepper flakes. Set aside.
Heat a large pan over medium heat. Once hot, add the oil.
Add the diced vegetables and turkey bacon. Sauté until the vegetables are translucent and the bacon begins to crisp, about 5–7 minutes.
Add the chopped spinach and stir until wilted, about 1 minute.
Add dollops of cottage cheese evenly around the pan.
Pour the egg mixture evenly over the pan contents.
Cover and reduce heat to low-medium. Cook 10–12 minutes, or until the eggs are fully set. Some stovetops may take up to 15 minutes.
