I learned something last night.

Aaron and I started watching this Netflix series called: You Are What You Eat: A Twin Experiment. We're only two episodes in. Worth watching.

But there we were sitting on the couch, when boom. It hit.

I should have known this already. I kinda did. It was just buried in the back of my mind, you know, the junk drawer where half-known things collect.

Aaron caught it. He turned to me and said, "I wonder if this includes the turkey bacon we've been eating." He did a quick search this morning and confirmed it.

So then I went into research mode. Here is what I found.

The Bacon Problem

We all know how delicious bacon is.

Am I right? Yes, of course I'm right. And, we also know the flip side of how bad bacon is for our health. It falls into the same category as carcinogens like processed deli meats and cured and smoked meats.

Here's the scoop:

The WHO's International Agency for Research on Cancer classified processed meat as a Group 1 carcinogen. This is the same category as tobacco and asbestos. Before you panic: Group 1 means there is sufficient evidence of a link, not that eating processed meat is the same risk as smoking a pack a day.

The actual number: eating 50 grams of processed meat daily increases colorectal cancer risk by 18 percent. That's roughly 6 slices of bacon or equivalent to one hot dog. Every single day.

The culprit isn't the meat itself. It's what happens chemically when nitrites (the preservatives used in curing) combine with proteins in the meat and are exposed to high heat. That reaction creates nitrosamines.

That's the cancer-causing compound.
